Use the Philips compatible Big Shell of BNN
- 150g wheat starch
- 50g potato starch
- 4g xanthan gum
- 2g salt
- 200ml boiling water
- 10ml oil
1 - Add all the wheat starch into the chamber (only wheat starch).
2 - Dissolve the salt in boiling water. Start the machine and then pour it gently into the chamber. Stop the machine at the end of the 3-minute kneading cycle.
3 - Add the potato starch, xanthan gum and oil directly into the chamber. Start a new 3-minute kneading cycle and stop the machine at the end of it.
4 - Start a new 3-minute kneading cycle and then let the dough rest for 20-30 minutes. It's important for the dough to have time to absorb liquid and become stronger.
5 - Start the machine again and let it go for a complete cycle: kneading and extruding.
For stuffing with shrimp, you can chop the shrimp into very smal pieces. Add salt, white pepper, the white part of scallions (green onions), sesame oil.
Optional: you can also add choped water chestnut for their fresh and crunchy aspect.
Steam them for about 10 minutes.
